Chilled Sesame Peanut-Chile Sauce

Spicy, sweet and salty. Diverse and delicious. When thinking about sesame peanut sauce I’m brought back to my childhood in NYC; Late night meals with the family on days when cooking just wasn’t in the cards. It was then I was introduced to cold sesame noodles, a dish that for years after would become a staple whenever Chinese was ordered. As I grew, so did my passion for cooking. I began messing around with different ways to utilize this magnificent sauce. I started off making my version of cold noodles at home. From there I started putting it on everything. Dipping, slathering, marinating, this sauce can really add a unique twist on any asian style dish. Just last week, Emily made these amazing spring rolls. Lucky for me it came with a side of sesame peanut-chile sauce.
Yields 1 1/2 cups of dressing
1/2 cup smooth peanut butter
1 tbsp honey
1 cup boiling water
4 tbsp rice vinegar
2 tsp minced garlic
1 tbsp sesame oil
1 tbsp soy sauce
1 small jalapeno (Serrano or Habanero depending on heat desired)
1/2 cup of chopped scallions
Combine peanut butter, honey and 1/2 cup of water in a medium bowl. Add the rest of the ingredients and whisk until blended well. Cover and refrigerate. Whisk well before serving.
